Swushi

Tortillas rolled up sort of like sushiSince I've started to develop a taste for sushi it struck me that you might do something similar using tortillas instead of seaweed.

Here's my first attempt at Southwest sushi, or what I'm calling swushi. There's rice, of course, rolled up with various things: guacamole, carrots, squash, corn relish, cilantro, and more.

The flavor was pretty good, but I discovered that corn tortillas don't roll up very well. Too stiff, even when moistened. All the ones in this picture are corn.

On the other hand, the flour tortillas did the job quite well. So while this batch wasn't a total success, the next time I think I'll do a lot better. I'm going to watch a couple of videos on making sushi too, since I've never actually seen it done.
