Beer-Battered Fish and Chips

Fish & Chips

Ingredients

  • 600g of white firm fish fillets
  • Beer batter (200ml of beer mix with 150g of corn flour)
  • Corn flour for coating
  • 4 large Potatoes peeled and cut into sticks
  • Oil for deep frying

Directions

  • Coat the fish with corn flour and Dip the fish into the batter.
  • Fry the fish in the oil at 180ºC, each pieces at a time for about 5-6 minutes until it turn golden brown then drain and place on the kitchen paper.
  • Fry the potato sticks until it's golden brown then drain.
  • Serve the Fish & chips together with Tartar sauce or Tomato sauce.

Chinese Steamed Pork

Chinese Steamed Pork

Ingredients

  • 400g of Pork mince
  • 1 tablespoon of finely chopped spring onion
  • 20g of chopped chinese pickle
  • 1 tablespoon of light soy sauce
  • 1/4 teaspoon of ground white pepper
  • 1/4 teaspoon of sugar
  • 1 teaspoon of oil
  • 1/2 teaspoon of corn flour

Directions

  • Mix pork mince with all the ingredients.
  • Make the pork into big oval shape and place into the dish.
  • Steam the pork in the steamer for about 12-15 minutes.
  • Serve hot with steam rice or noodle.

Garlic Beef Patty

Garlic Beef

Ingredients

  • Beef mince 800g
  • 1/2 onion, finely chopped
  • 10 cloves of garlic, finley chopped
  • Salt and pepper to taste
  • 2 tablespoons of butter
  • 1 teaspoon of olive oil

Directions

  • Mix the beef mince with onion, garlic and a little salt. Make ball shapes and flatten them.
  • Melt the butter in the pan, add little oil to prevent the butter from burning.
  • Sprinkle some salt and pepper on the patties and fry them until they are cooked (shouldn't have any trace of blood when drilling the hole in the patty.) but don't over cook as it should be a bit juicy.
  • Serve warm with bread, rice or as an appetizer.

Teriyaki Chicken

Teriyaki Chicken

Ingredients

  • 5 boneless chicken thighs, cut into 1 inch wide strip
  • 5 tablespoons of Japanese soy sauce
  • 1/4 tablespoon of salt
  • 5 tablespoons of honey
  • 1 teaspoon of sesame oil
  • 2 teaspoons of sesame seeds
  • 3 tablespoons of orange juice
  • 2 stems of spring onions, cut into 1 inch pieces
  • bamboo skewers

Directions

  • Make the sauce by combining soy sauce, salt, honey, sesame oil, sesame seeds and orange juice together.
  • Marinate the chicken with the sauce for about 20-30 minutes (the longer it stays on the better the taste will be absorbed).
  • Skew the spring onion followed by the chicken. Continue to use all ingredients.
  • Grill the chicken sticks on the charcoal griller, bbq or on the pan. Brush the sauce on the top of the chicken sticks and turn occasionally.
