DILL CUCUMBERS |

This cucumber dish can be a nice change from your usual dinner salad. |
Preparation time: 10 minutes plus standing. |
Ingredients:
- 1 cup water
- 1/4 cup red-wine vinegar
- 3/4 teaspoon salt
- 2 medium cucumbers
- 1 small red onion, thinly sliced
- 1 teaspoon dried dill

Directions:
- In a large glass or ceramic bowl, combine the water, vinegar, and salt. Mix well.
- Thinly slice cucumbers. Add cucumbers, red onion, and chopped dill to the marinade. Gently toss until ingredients are well combined.
- Cover bowl with plastic wrap. Let stand for at least 1 hour at room temperature or refrigerate for up to 4 hours.
- Just before serving, toss well. Using a slotted serving spoon, place the cucumbers on serving plates.

Tips:
- Garden fresh cucumbers do not have to be peeled. Store bought cucumbers are treated with a wax coating to maintain freshness and therefore should be peeled.
- The longer the cucumbers marinate, the more flavorful the salad will be.
